Love making this salad from Crudessence cookbook, or should I say , raw book;) It gives me at least 6 portions for my week:) Healthy, easy and yummy! The star of this salad for me is the tumeric in the dressing. Turmeric is a powerful anti-inflammatory which is so important to reduce inflammation in our body to avoid disease and illness. Turmeric is also a blood purifier and helps sooth respiratory illness, supports the liver and has even been proven to help prevent cognitive diseases like Alzheimer's. So don't be shy to add this golden powder to any soup, smoothie, salad dressing... Your body will thank you for it!

4 branches of celery thinly sliced 1 English cucumber seeds removed ( cut in half and with a teaspoon scoop out the seeds) cut in cubes 2 red peppers diced in cubes 3 -4 medium carrots grated 1 Fennel bulb ( use stem and all) cut bulb in 4 then thinly sliced 3-4 cups of grated cabbage (mix purple and green, you can buy already shredded ) 1/2 a bunch of parsley chopped 1 bunch of dill chopped

*You can use a mandoline slicer or knife to thinly slice the veggies Mixe all veggie together in a big salad bowl , cover and keep in fridge. When ready to serve you may add grape tomatoes cut in half and the dressing. Dressing: 1/2 cup of maple syrup or Honey 1/4 cup of olive oil 1/3 cup of tahini 1/2 cup Apple cider vinegar 2-3 tablespoons of tamari sauce 1 tablespoon of turmeric powder 1 cup of water Mixe all salad dressing ingredients in a Mason Jar and keep on counter for 3-4 days or refrigerate , enjoy!
