Overnight oats are very in right now, they are easy to make and convenient for hectic mornings. But there is even more good reasons to eat oats, they contain a specific fiber called. beta-glucan that is proven to help reduce cholesterol levels and also because of its high fiber food status , studies have shown that consuming oats regularly will supports weight loss and stabilize blood sugar levels.

Makes about 8 cups ( My servings are 2 cups each )

Ingredients:

1 can of organic pumpkin pie mix

3 1/2 cups of Gluten free organic rolled oats

4 cups of plant based milk

In a mixing bowl put the pumpkin pie mix, milk and stir till smooth. Add oats and stir till well mixed.

Transfer Oat mixture in mason jars or keep in mixing bowl ( I like putting them in jars to have individual servings ready to go). Put oats overnight in fridge.

When ready to eat, top them off with cacao nibs, pumpkin seeds or anything your tummy desires:)

Enjoy!
