I usually am not a big fan of tofu, but this recipe from Loonie Cuisine is addictive! I have added it to fried rice, used in sandwiches, salads and veggie bowls. I can eat a whole batch to myself:) Even my meat lover friends love this recipe, and because tofu contains no cholesterol and is an excellent source of iron, calcium and protein why not add it to your healthy lifestyle :)

Ingredients:

1 Block of *Organic extra firm tofu 450-454g (*see note)

1 Tbsp of lemon juice

1 Tbsp of tamari sauce

1 Tbsp of maple syrup

1/2 cup of nutritional yeast

Preheat oven 400F

Take tofu out of package and with a clean kitchen cloth sponge out as much liquid as you can to take some of the moisture out.

In a bowl, seperate the tofu in bite size nuggets using your fingers.

Add to the tofu the lemon juice, tamari, maple syrup. Stir until tofu is all covered.

Add nutritional yeast and stir again until tofu is evenly covered ( I like to use a spatula and don't worry if the tofu pieces brake a little)

Place tofu mixture on a parchment lined cookie sheet and put in oven at 400F for 20 minutes, then flip the tofu and put for another 15 minutes or until golden and crispy to your liking.

Serve as main with a side or add to your fried rice, salad, veggie bowl, sandwich, pasta...

Enjoy!

*you always want to make sure that any soya product you buy is organic ( non genetically modified and no chemicals like pesticides) or at least Non GMO. ( non genetically modified but still has chemicals like pesticides ) If it is not Organic or labeled Non GMO then you are eating genetically modified soya. to know more about GMO's take a look at my article here https://www.tracybarrcoaching.com/post/what-the-heck-is-a-gmo
