"Cheezy" Broccoli Chowder Recipe

Vegan gluten free food can also be comfort food! Did you know that broccoli is high in vitamins and minerals like vitamin A, C, K and B-complex as well as calcium, magnesium, zinc and iron? Broccoli is highly beneficial for the nervous system, it helps with migraines, anxiety , hypertension. It has been proven to help fight against certain cancers and even fight off the common cold and seasonal allergies... Isn't mother nature great?

6-8 servings

3 medium size carrots chopped

1/2 onion diced

3 cloves of garlic minced

1 cup of chopped celery

1 medium size broccoli chopped in bite size pieces ( don't use stalk just the top part)

4 medium size potatoes peeled and diced

4 cups of vegetable stock

1 can of coconut milk ( full fat)

1/2 cup of nutritional yeast

1 cup of vegan shredded cheese ( optional)

2 tbsp of olive oil


In a big pot or dutch oven add olive oil and put on medium heat.

Add onion and saute for 1 minute, then add garlic. Saute for another minute making sure it does not brown by stirring.


Add celery, broccoli, and potatoes, saute for about 5 more minutes and stir so nothing sticks.


After 5 minutes, add vegetable broth and coconut milk. Bring heat higher to make liquid simmer. let simmer for 25 minutes until veggies are tender but not mushy:)


When veggies are to your liking, add nutritional yeast and vegan cheese , stir till broth is smooth.


Taste and adjust seasoning if needed with salt and pepper.


If wanted, serve with chives on top and more vegan shredded cheese :)


Keeps in fridge for a week. Can be frozen.
