Vegan Gluten Free Cauliflower Alfredo Recipe

When you are craving something rich and creamy this is the recipe to make and plus its healthy! Cauliflower is incredibly high in vitamin C, K and B-complex. It's a good source of calcium as well as protein.


Makes 4 portions

1 medium cauliflower cut in pieces

I onion chopped

3 cloves of garlic

1 Tbsp of olive oil

1/3 cup plant based milk

2 Tbsp of white miso paste

3/4 of teaspoon of salt

1/2 tsp of yellow mustard

18 oz of GF Penne pasta or any GF pasta of your choice


Boil water in medium pot. Once water is boiling add pinch of salt and add cauliflower . Cook cauliflower till tender.


While cooking cauliflower , heat the olive oil in a pan and saute onion and garlic on medium heat for about 6 minutes while stirring frequently. Adjust heat, you do not want to brown them.


Once cauliflower is cooked, strain and transfer into your Vitamix or blender. Add onion and garlic, plant based milk. Blend until mixture is smooth. Add miso, salt, nutritional yeast, mustard and blend till mixture is smooth again. taste and adjust seasoning.


Cook pasta as directed on package.


After straining the pasta , return it to the pot and add the sauce and heat everything up for about 3 minutes, stirring to assure nothing sticks to the bottom. Taste and adjust seasoning.


Serve with roasted pine nuts , cracked pepper or any topping your heart desires:)
