Easy Vegan Gluten Free Potato Leek Soup Recipe

This soup is so easy with only a few ingredients :) It definitely hits the spot and is full of nutrients and healthy fats. Potatoes are high in potassium as well as rich in vitamin B6 and Lysine. Potatoes are also antifungal and antibacterial. Potatoes get a bad rap but let's face it, what is bad is not the potato but what we do to it: Frying it in toxic oils, adding sour cream, cheese, butter, milk. What you add to the potato is the problem not the potato itself:) So indulge in making healthy potato recipes by skipping the frying, cream, butter, cheese, milk and you will get all the comfort and benefits of eating them without the guilt and negative side effects.

Ingredients:
6 yukon gold medium potatoes cubed
2 big leeks white part only, washed and chopped
1 onion chopped
5 cups of veggie broth ( *see note at bottom for homemade broth recipe )
1 can of full fat coconut milk
1 Tbsp of coconut oil
1 teaspoon of salt
1 handful of chopped cilantro ( optional)
In a dutch oven or big pot melt coconut oil, add onion and cook for about 3 minutes on medium heat making sure they don't brown.
Add potatoes and leeks and cook for about 10 minutes and stir frequently so nothing sticks on the bottom:)
Add salt , veggie broth and coconut milk. Bring to a boil.
Once its boiling, lower heat and let simmer for about 20 minutes or until potatoes and leeks are tender.
If you are using the cilantro add once veggies are tender and simmer for an extra 5 minutes.
Turn heat off let it cool off for a few minutes then pure the soup with a hand blender or do it in batches with your blender or vitamix. I prefer the hand blender:)
Taste and adjust seasoning.
Decorate with chopped cilantro if desired, Enjoy!
